Almond Butter Chia Banana Bread!

Ingredients

3 very ripe medium bananas
1/3 cup unsweetened applesauce
1/2 cup creamy raw almond butter,
1 large egg,
1/2 cup raw coconut sugar
1 cup sorghum flour
1/2 cup almond meal
1/2 teaspoon baking soda
1.5 teaspoon baking powder
1 tablespoon chia seeds
coconut oil to grease the pan
organic berries (topping)
Preparation

1. Preheat oven to 180º

2. Combine dry ingredients (sorghum flour, almond meal, baking soda & powder) in a small bowl and lightly whisk to combine.

3. Peel and mash bananas using a fork in a large mixing bowl. Add applesauce, and coconut sugar and mix well. Add in egg, whisk until blended in, then stir in almond butter until smooth and consistent.

4. Add dry ingredient mixture to the wet mixture in 3 parts, stirring gently after each addition. Be careful not to over-mix, you want to just stir in gently enough until combined, no more.

5. Gently stir in chia seed, reserving some for later. Stir minimally until combined.

6. Lightly grease 8.5 x 4.5-inch bread loaf pan with coconut oil. Add in batter, and sprinkle reserve chia seeds on top & organic berries or currants.

7. Place pan in the oven and bake for 30-40 minutes until edges are darkened a bit and start to pull away from the pan. Good test tip- stick a toothpick in the centre and if it comes out clean, it is done. If batter sticks to it, it needs some more time.

8. Remove from oven, let it sit in the pan for a few minutes, then transfer to a wire rack to cool. Slice and serve!

Matcha Chip Protein Squares –

Serves 9

Ingredients

1 ½ cups gluten-free rolled oats, processed to a flour
½ cup protein powder
3 tablespoons matcha powder
¼ teaspoon Himalayan sea salt
¼ cup raw cocoa nibs
½ cup almond butter
3 tablespoons of chia seeds
1/3 cup almond milk
¼ cup maple syrup
¼ cup almond milk
1 teaspoon vanilla
Preparation

1. Soak the chia seeds in 1/3 cup almond milk and place in the fridge for about 10 minutes. Line an 8×8 square pan with parchment paper.

2. Process your oats in a food processor until you get close to a flour-like texture and place in a large mixing bowl.

3. Mix the oat flour, protein powder, matcha, sea salt, and cocoa nibs together.

4. Add in the almond butter, soaked chia seeds, maple syrup, almond milk, and vanilla and stir well to combine. Don’t be afraid to get in with your hands!

5. Press the mixture into the pan evenly. If necessary, use a pastry roller to smooth out the top. Place pan in the freezer for 10-15 minutes.

6. Cut the bars into squares. Store them in an airtight glass container for up to a week in the fridge. Enjoy!

 

 

Ingredients

14 cups water, divided (use filtered water or alkalised water, if possible)
1 cup sugar (we prefer organic sugar; although caster sugar does the trick)
5 teaspoons organic loose-leaf black tea or organic green tea
1 cup finished plain kombucha (from a previous batch, a store-bought bottle, or from the liquid the SCOBY comes in)
1 kombucha SCOBY (obtain from a friend or purchase from reliable retail source)
Directions

1. Boil 3 cups of water in a stainless steel pot. Add the sugar, and stir until it has dissolved. Remove pot from heat and add loose tea. Allow to soak/cool for about 30 minutes.
2. Pour sweet tea through a fine mesh strainer into your fermenting container (a 1ltr glass jar with a wide mouth works well…don’t use metal or plastic). Compost or discard the tea leaves. (Alternatively, you can place your loose tea into a muslin tea bag and simply remove the tea bag after steeping.)
Add the finished kombucha and the SCOBY to the jar with the sweet tea, then add the remaining water (10 cups). Cover the top of your jar with cheesecloth and secure it with a rubber band.
Leave undisturbed for 7 to 10 days in a warm, dark place. (As your kombucha ferments, a new SCOBY will grow attached to the original one to the width of your container.)
3. After a week, sample your kombucha to determine if it’s ready to drink. It should be a bit bubbly and taste both sweet and sour without much hint of the tea. If you’re pleased with the taste, use clean hands to remove your SCOBY (and carefully separate it from the new one) and store as directed above.
Transfer kombucha to glass jars for storage (swing-top bottles work well), leaving about 1/2 inch headspace at the top. Allow bottled kombucha to sit at room temperature for a day or two to ferment a bit more/build up carbonation, then place in refrigerator until ready to drink.
Kombucha will last in the refrigerator for up to three months, but it’s best if consumed sooner; we recommend drinking it within a week of opening a bottle.

 

Healing Slow-Cooked Lamb & Thyme Soup

For the Lamb Stock

1 lamb shank
4 cups water
2 carrots, sliced
1 onion, quartered
2 bay leaves
salt + pepper
coconut oil to drizzle
For the soup

2 small potatoes
2 sweet Potatoes
2 carrots
2 tomatoes
1 onion
2 garlic cloves
salt + pepper
1/2 cup red wine
1 teaspoon finely grated turmeric
1 teaspoon fresh oregano
1 teaspoon fresh thyme
1/2 teaspoon cumin
Preparation

1. To make the stock, season the lamb shank with salt and pepper, sear on both sides in a little coconut oil, then place in your slow cooker with the other ingredients. Cook on low overnight for 9-10 hours.

2. Remove the lamb shank. The meat should be falling off the bone. Chop the meat into small pieces. Set aside.

3. Let stock cool before placing in refrigerator. Once cooled, fat should settle on top. Skim off any fat and sieve the stock. Keep the liquid and place back in your slow cooker.

4. Prepare potato, sweet potato, carrots and tomatoes and cut into tiny pieces.

5. Place vegetables in your slow cooker with finely chopped onion and garlic, salt, pepper, turmeric, red wine, thyme, oregano and cumin.

6. Cook the soup on low for 6-8 hours. Add the lamb shank to the soup an hour before the soup is ready.

7. Ladle into warmed bowls, sprinkle with parsley and serve.
