# 2 eggs.
# 1/4 cup protein powder.
# 1/2 mashed banana.
# 1 teaspoon flax meal.
# handful of blueberries, fresh or frozen.
Directions 1. Mash half your banana first in one bowl. In another bowl mix your eggs and protein powder with a whisk trying to get most lumpy powdery bits out. Then throw your banana in, with the remaining ingredients. If need be, add a splash of milk or water.
2. Heat a small non-stick pan on low and add a little coconut oil or butter to melt. Then pour your pancake mixture in and add a handful of blueberries on top.
You must keep the heat on low or you’ll have a burnt base and an uncooked middle. Wait until you start to see bubbles forming on the top before flipping your pancake. This can take 10-15 minutes.
3. Once you flip your pancake it will only need a few minutes to brown and then it’s ready. 4. Serve with the other half of your banana, sliced, drizzled rice malt syrup or yoghurt, as desired. –
